How to make lacto-fermented vegetables

What are Lacto-Fermented Foods?

You may not be familiar with the lacto-fermentation process, but it is essentially the process that produces pickles, kimchi and sauerkraut that you may see on supermarket shelves. However, it is a straightforward and enjoyable process to learn to make these healthy snacks and meal accompaniments from regeneratively grown, local and seasonal produce with minimal food miles. It requires nothing more than a bit of knowledge, salt, vegetables and water.

HOW DOES LACTO-FERMENTATION WORK?

The lacto-fermentation process works because bacteria that could be harmful to humans cannot tolerate much salt, while healthy bacteria can. Lacto-fermentation eliminates the bad bacteria in its first stage and then lets the good bacteria get to work in the second stage.

In our pickling classes you will learn about what types of foods work well in lacto-fermentation, how exactly the process works, its nutrient values and health benefits as well as enjoying the distinctively tangy flavour of the lacto-fermented foods that you have made.

The Rosewell Centre also produces its own range of lacto-fermented pickles which are available to purchase in our online shop, or just pop into the Centre to pick up a jar or two!

Our fun and friendly healthy food workshops are held regularly at the Rosewell Centre and run from other venues around the Castle Bytham, Grantham, Stamford, Bourne and Oakham areas.

You can take part in one of our Healthy Food Workshops on a one to one basis or as part of a larger group class. We can also include a healthy food workshop as part of a wellbeing retreat in the glorious South Lincolnshire countryside. Founder and Director

Sue Hix founded The Rosewell Centre in 1996 as a place to celebrate health and wellbeing from a holistic perspective.  She has over 30 years experience of teaching healing and health practises and provides Shiatsu, Tai Chi and Yoga, as well as organising Rosewell Retreats.

In these times Sue is focusing on bringing inspiration, healing and connection, while respecting diversity of values and beliefs.  Solutions to well being that are low cost and user friendly which can be shared widely to democratise transcendence into new consciousness.  Key elements of focus are – regulating respiration to shift physical and psychological states, – teaching how the nervous system regulates the body – presenting learning about hormone drivers and the effect of foods or substances which change our feelings – bringing transformative music into the arena, which soothes the soul and opens us to the capacity for awe.
